About “Tofu Hyakuchin”
The Tofu Hyakuchin is a Japanese recipe book published in 1782 during the Edo period. It lists 100 recipes for preparing tofu. The author is listed as Seikyōdōjin Kahitsujun, though it is believed his real name was Sodani Gakusen, a seal-engraver from Osaka. Due to its popularity, two additional volumes were published: Tōfu hyakuchin zokuhen and Tōfu hyakuchin yōroku. The book remains a significant historical reference on tofu preparation in Japan.
