Jean Anthelme Brillat-Savarin was a French lawyer, magistrate, and politician who authored 'The Physiology of Taste,' a work that is considered one of the most celebrated texts on food. The book, which consists of eight volumes and bears the full title 'The Physiology of Taste, or Meditation on Transcendent Gastronomy, a Work Theoretical, Historical, and Programmed,' was published shortly before his death. It contains few recipes but includes numerous anecdotes and observations on the pleasures of the table. He is regarded as one of the most influential figures in the history of food writing.
